This great RAW Veggie Recipe is brought to you from my friend, Susie Arevalo of Sapidness! You should stop by her blog and show her some LOVE!
1/2 to 1 c. fresh basil (or cilantro)
1/4 c. apple cider vinegar
2 T. olive oil
1 t. soy sauce
1 yellow bell pepper, chopped
1 to 2 cobs of corn, kernels cut off
1 apple cored and chopped
Combine ingredients in blender, and blend till you are happy with the consistency. I go all the way to no chunks. Just throw it all in there – need to take off skins or seeds.
Combine items in a bowl, pour base over it. Mix. Eat. Fall in Love.
Is great as leftovers, chilling is good but I am not a patient person.
I was going to make it last night, but I got caught up in making veggie lasagna, so I will be making it this afternoon! I hope you all enojy it!
