Today (7/30/12) is National Cheesecake Day!

Andy’s family doesn’t call them cheesecakes, though  They call them cream cheese pie, and Andy prefers his with a hint of lemon in the actual pie and no toppings.  (Of course I don’t have a picture of it, so I borrowed one from kraftrecipes.com where you can find another simple cheesecake recipe.)

It goes a little something like this:

Nana’s Easy Lemon Cream Cheese Pie

  • 8 ounce cream cheese
  • 1/2 cup sugar
  • lemon juice to taste
  • graham cracker crust

Whip the cream cheese, sugar, and lemon juice together until smooth and creamy.  Add to the graham cracker crust.  Chill.

That’s it!
