Organic Baby Arugula Chips Recipe (Kale Chips Knock Off)

I love Kale Chips.  I've made them several times, around here, from Rachel's Recipe at Following in my Shoes. Andy brought home some organic baby arugula, and I was decided to see if I could make arugula chips, because I LOVE the flavor of arugula!  (I'm sure there's already a recipe out there but I was too lazy to search!) Ingredients 3 cups of Organic Baby Arugula 1 tsp Olive Oil Pinch of Salt Pinch of Pepper (optional) Pinch of Garlic Powder (optional) Make sure the ingredients are completely dry. Meatless Monday – Meatless Southwest Skillet Recipe

Meatless Monday - one day a week, cut out meat. While grocery shopping this weekend, we ran across samples of this Southwest Skillet recipe.  It was fabulous, however, for Meatless Monday, we're going to use pinto beans as a replacement for ground turkey.  They're in the crock pot now! (Anywhere you see pinto beans in this recipe, you can add ground turkey or ground beef.
