I was in a rush, and I needed something to make to take to a function I was attending, and I remembered a recipe that I learned in 3rd grade that was SO easy!  We called it Dinosaur Food, but really, it was just chocolate chips, peanut butter, and oatmeal.  Those flavors together are so good, but when you take it just a step further, and add butter and vanilla, it takes it to a whole different level!  This No Bake Chocolate Cookies Recipe is easy to make with the kiddos, and very quick!

No Bake Chocolate Cookies Recipe

Ingredients:

  • 1 stick of butter
  • 1/2 cup of milk
  • 2 cups of sugar
  • 2 teaspoon vanilla extract
  • 3 tablespoons of peanut butter (if you have an allergy, this is optional)
  • 1 cup of chocolate chips
  • 3 cups of dry, uncooked oats
  • 1/4 cup of powdered sugar (optional)
  • 3 tablespoons of cocoa powder (optional)
Directions:

Combine the chocolate chips, peanut butter, and oats into a mixing bowl. In a saucepan, mix the butter, milk, sugar, and vanilla.  Bring to a boil for at least one minute. Pour the hot mixture into the mixing bowl with the rest of your ingredients and stir until melted and mixed well. Drop onto wax, parchment paper, or foil by the spoonfuls, and let them cool completely so that they will harden.

Depending on your preferred taste and presentation, you can leave the cookies plain, add powdered sugar, or a mixture of powdered sugar and cocoa powder. The cookies can be lightly dusted or completely rolled in your choice as pictured.
