Andy and I have talked about Meatless Monday several times, but we’ve never buckled down and start having meals without meat on Mondays.

Why?  Well, there’s a lot of times, throughout the week that we’ll have meatless meals, so we never really had a need to pick a specific day.

Next week, we’re going to designate Mondays as meatless.  If there happens to be another day or two of the week that falls into the meatless category, so be it.

I’ve been thinking about getting the Meatlover’s Meatless Cookbook, and then I ran across this site, through MyPoints or something,  called Fave Diets.  It’s a pretty nifty site, and if you sign up for their newsletter, you receive great info directly to your inbox.  This morning, I received one entitled:

Here are a few that I’d like to try.  These do not seem like you need to be a master chef to prepare them, either!

Healthy Spinach Bake – I’m not sure how my family will like this, but it sounds like something I would absolutely LOVE!

Bean and Veggie Enchiladas – A lot of this is just saute, mix, and fill!  Easy.

Meatless Barbecue Sandwiches – I think I’m going to try this one with some kind of beans, rather than veg protein.

Make Ahead Vegetarian Breakfast Casserole – Everyone love breakfast for dinner!

Visit the Fave Diets website for 20 Cheap Vegetarian Meals.  Not all meals have to be filled with meats!  Get your protein from other food sources, and go meatless every once in a while!
